Good things take time...
First, 8 Wired ages and blends a pale sour beer base in oak barrels
for over 2 years till its perfectly ready.  Then they add loads of local organic fresh Feijoas straight into the barrel (through the bung)
THEN age for another year. 
A time-consuming process but well worth the wait!
